For the Crust:
- 1 cup all-purpose flour
- 1 tablespoon unsweetened cocoa powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 tablespoon red food coloring
- 12 chocolate truffles
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.
- In another bowl, beat butter and sugar until creamy, then add the egg, vanilla, and red food coloring, mixing until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Chill the dough for 30 minutes.
- Scoop 2 tablespoons of dough and flatten, placing a chocolate truffle in the center, then wrap the dough around to seal. Repeat with remaining dough.
- Place cookies on the prepared baking sheet and bake for 12-15 minutes or until cookies are set but still soft in the center.
