For the Crust:
- 4 boneless, skinless chicken breasts, cut into strips
- 1/4 cup olive oil
- 3 tablespoons fresh lemon juice
- 2 cloves garlic, minced
- 1 tablespoon dried oregano
- 1 teaspoon paprika
- Salt and black pepper to taste
- 1 cup prepared hummus
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup Kalamata olives, pitted
- Fresh parsley for garnish
- Pita bread or cooked quinoa for serving
Instructions
1. Prepare the Crust:
- In a bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Add chicken strips, toss to coat, and marinate for at least 30 minutes.
- Heat a grill or skillet over medium-high heat. Cook chicken for 5-7 minutes per side until fully cooked and slightly charred. Let rest for 5 minutes, then slice.
- Assemble bowls by spreading a layer of hummus at the bottom. Top with sliced chicken, cucumber, cherry tomatoes, red onion, and olives.
- Garnish with fresh parsley and serve with pita bread or quinoa on the side.
