For the Crust:

  • 4 boneless, skinless chicken breasts, cut into strips
  • 1/4 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • 1 cup prepared hummus
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted
  • Fresh parsley for garnish
  • Pita bread or cooked quinoa for serving

Instructions

1. Prepare the Crust:

  1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Add chicken strips, toss to coat, and marinate for at least 30 minutes.
  2. Heat a grill or skillet over medium-high heat. Cook chicken for 5-7 minutes per side until fully cooked and slightly charred. Let rest for 5 minutes, then slice.
  3. Assemble bowls by spreading a layer of hummus at the bottom. Top with sliced chicken, cucumber, cherry tomatoes, red onion, and olives.
  4. Garnish with fresh parsley and serve with pita bread or quinoa on the side.
