For the Crust:
- 1 lb cherry tomatoes
- 2 tbsp olive oil
- 1 tbsp honey
- 1/2 tsp red pepper flakes
- 1 clove garlic, minced
- 8 oz feta cheese
- 1/4 cup Greek yogurt
- 1 tbsp lemon juice
- Fresh basil for garnish
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- In a food processor, blend feta, Greek yogurt, and lemon juice until smooth. Transfer to a serving plate and spread evenly.
- Heat olive oil in a skillet over medium-high heat. Add cherry tomatoes and cook until they begin to blister, about 5 minutes.
- Reduce heat to medium, add honey, red pepper flakes, garlic, salt, and pepper. Cook for another 2-3 minutes until tomatoes are soft and saucy.
- Spoon the sweet-heat tomatoes over the whipped feta. Garnish with fresh basil and serve with crusty bread.
