Description

A vibrant dish featuring blistered sweet-heat cherry tomatoes served over a bed of creamy whipped feta, perfect as an appetizer or light meal.


Ingredients

For the Crust:

  • 1 lb cherry tomatoes
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1/2 tsp red pepper flakes
  • 1 clove garlic, minced
  • 8 oz feta cheese
  • 1/4 cup Greek yogurt
  • 1 tbsp lemon juice
  • Fresh basil for garnish
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a food processor, blend feta, Greek yogurt, and lemon juice until smooth. Transfer to a serving plate and spread evenly.
  2. Heat olive oil in a skillet over medium-high heat. Add cherry tomatoes and cook until they begin to blister, about 5 minutes.
  3. Reduce heat to medium, add honey, red pepper flakes, garlic, salt, and pepper. Cook for another 2-3 minutes until tomatoes are soft and saucy.
  4. Spoon the sweet-heat tomatoes over the whipped feta. Garnish with fresh basil and serve with crusty bread.
