A festive and delicious sweet potato casserole shaped into a beautiful holiday wreath, topped with a crunchy pecan streusel and marshmallows.

For the Crust:
- 3 cups mashed sweet potatoes
- 1/2 cup brown sugar
- 2 large eggs, beaten
- 1/4 cup melted butter
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 cup all-purpose flour
- 1/2 cup chopped pecans
- 2 tbsp granulated sugar
- 2 tbsp cold butter, cubed
- 1 cup mini marshmallows
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a round baking pan or wreath mold.
- In a large bowl, mix mashed sweet potatoes, brown sugar, eggs, melted butter, vanilla, cinnamon, and nutmeg until smooth.
- Spread the sweet potato mixture into the prepared pan, shaping it into a ring to form a wreath.
- In a small bowl, combine flour, pecans, granulated sugar, and cold butter cubes. Use a fork or fingers to mix until crumbly.
- Sprinkle the pecan streusel evenly over the sweet potato wreath.
- Bake for 25-30 minutes, or until set. Remove from oven and top with mini marshmallows.
- Return to oven for 3-5 minutes, or until marshmallows are lightly toasted. Let cool slightly before serving.
