For the Crust:
- 2 cups mashed sweet potatoes
- 1 cup all-purpose flour
- 1/2 teaspoon ground cinnamon
- 1/4 cup sugar
- 1/2 teaspoon salt
- 1 cup water
- 2 tablespoons butter
- Oil for frying
- 4 ounces goat cheese
- 1/4 cup salted caramel sauce
Instructions
1. Prepare the Crust:
- In a saucepan, combine water, butter, and salt; bring to a boil.
- Add flour and stir vigorously until mixture forms a ball.
- Remove from heat and incorporate mashed sweet potatoes and cinnamon.
- Transfer dough to a piping bag fitted with a star tip.
- Heat oil in a pan and pipe churro lengths into the oil, frying until golden.
- Drain churros on paper towels and roll in sugar.
- For the dip, blend goat cheese with salted caramel sauce until smooth.
- Serve churros warm with the dip on the side.
