Sweet potato churros serve as a unique twist on a classic treat, paired with a creamy salted caramel goat cheese dip.

For the Crust:

  • 2 cups mashed sweet potatoes
  • 1 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1 cup water
  • 2 tablespoons butter
  • Oil for frying
  • 4 ounces goat cheese
  • 1/4 cup salted caramel sauce

Instructions

1. Prepare the Crust:

  1. In a saucepan, combine water, butter, and salt; bring to a boil.
  2. Add flour and stir vigorously until mixture forms a ball.
  3. Remove from heat and incorporate mashed sweet potatoes and cinnamon.
  4. Transfer dough to a piping bag fitted with a star tip.
  5. Heat oil in a pan and pipe churro lengths into the oil, frying until golden.
  6. Drain churros on paper towels and roll in sugar.
  7. For the dip, blend goat cheese with salted caramel sauce until smooth.
  8. Serve churros warm with the dip on the side.
