Description

A delightful appetizer featuring roasted sweet potato slices topped with creamy honeyed feta and crunchy toasted walnuts.

For the Crust:

  • 2 medium sweet potatoes, sliced into 1/2-inch rounds
  • 2 tbsp olive oil
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste
  • 4 oz feta cheese, crumbled
  • 2 tbsp honey
  • 1/4 cup walnuts, toasted and chopped
  • 1 tbsp fresh thyme leaves

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss sweet potato rounds with olive oil, smoked paprika, salt, and pepper. Arrange in a single layer on a baking sheet and roast for 20-25 minutes, flipping halfway, until tender and lightly browned.
  2. In a small bowl, mix crumbled feta with honey until well combined.
  3. Toast walnuts in a dry skillet over medium heat for 3-5 minutes, stirring frequently, until fragrant. Let cool, then chop roughly.
  4. Top each roasted sweet potato round with a spoonful of honeyed feta, a sprinkle of toasted walnuts, and a few fresh thyme leaves. Serve warm.
