For the Crust:

  • 2 medium sweet potatoes, peeled and thinly sliced
  • 2 cloves black garlic, minced
  • 1 lime, juiced and zested
  • 2 tablespoons olive oil
  • 1 teaspoon honey
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh cilantro leaves
  • 1 tablespoon toasted sesame seeds

Instructions

1. Prepare the Crust:

  1. Using a mandoline or sharp knife, slice sweet potatoes into very thin rounds.
  2. Arrange sweet potato slices in a single layer on a serving platter.
  3. In a small bowl, whisk together black garlic, lime juice, lime zest, olive oil, honey, salt, and pepper to make the vinaigrette.
  4. Drizzle vinaigrette evenly over the sweet potato slices.
  5. Garnish with cilantro leaves and toasted sesame seeds.
  6. Let sit for 10 minutes before serving to allow flavors to meld.
