For the Crust:
- 2 large sweet potatoes, peeled and cut into fries
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- 4 ounces goat cheese
- 1/4 cup sour cream
- Zest of 1 lemon
- 1 tablespoon fresh chives, chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 425°F (220°C).
- In a large bowl, toss sweet potatoes with olive oil, paprika, cayenne, salt, and pepper until evenly coated.
- Spread fries in a single layer on a baking sheet. Bake for 25-30 minutes or until crispy, flipping halfway through.
- In a small bowl, mix goat cheese, sour cream, lemon zest, and a pinch of salt until smooth.
- Serve fries hot with the zesty goat cheese cloud sprinkled with fresh chives.
