Description

Crispy sweet potato fries paired with a tangy and creamy goat cheese dip. A perfect side dish or appetizer.

For the Crust:

  • 2 large sweet potatoes, peeled and cut into fries
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 4 ounces goat cheese
  • 1/4 cup sour cream
  • Zest of 1 lemon
  • 1 tablespoon fresh chives, chopped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 425°F (220°C).
  2. In a large bowl, toss sweet potatoes with olive oil, paprika, cayenne, salt, and pepper until evenly coated.
  3. Spread fries in a single layer on a baking sheet. Bake for 25-30 minutes or until crispy, flipping halfway through.
  4. In a small bowl, mix goat cheese, sour cream, lemon zest, and a pinch of salt until smooth.
  5. Serve fries hot with the zesty goat cheese cloud sprinkled with fresh chives.
