For the Crust:

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces goat cheese, crumbled
  • 1/2 cup cranberry sauce
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • Fresh thyme leaves for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss sweet potato rounds with olive oil, salt, and pepper. Arrange in a single layer on the baking sheet and roast for 20-25 minutes, flipping halfway, until tender and lightly browned.
  3. In a small saucepan, combine cranberry sauce, balsamic vinegar, and honey. Simmer over medium heat for 5-7 minutes, stirring occasionally, until slightly thickened.
  4. Top each sweet potato round with crumbled goat cheese and a drizzle of the cranberry balsamic glaze. Garnish with fresh thyme leaves before serving.
