A savory-sweet tart featuring roasted sweet potatoes on flaky puff pastry, topped with creamy whipped goat cheese and fresh herbs.

For the Crust:

  • 1 sheet puff pastry, thawed
  • 2 medium sweet potatoes, thinly sliced
  • 4 oz goat cheese
  • 1/4 cup heavy cream
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Fresh thyme or rosemary for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F. Roll out puff pastry on a parchment-lined baking sheet and prick all over with a fork.
  2. Toss sweet potato slices with olive oil, smoked paprika, garlic powder, salt, and pepper. Arrange in overlapping layers on the pastry.
  3. Bake for 25-30 minutes until pastry is golden and sweet potatoes are tender.
  4. While baking, whip goat cheese with heavy cream until light and fluffy.
  5. Let tart cool slightly, then dollop with whipped goat cheese and garnish with fresh herbs.
