For the Crust:
- 1 sheet puff pastry, thawed
- 2 medium sweet potatoes, thinly sliced
- 4 oz goat cheese
- 1/4 cup heavy cream
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- Fresh thyme or rosemary for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F. Roll out puff pastry on a parchment-lined baking sheet and prick all over with a fork.
- Toss sweet potato slices with olive oil, smoked paprika, garlic powder, salt, and pepper. Arrange in overlapping layers on the pastry.
- Bake for 25-30 minutes until pastry is golden and sweet potatoes are tender.
- While baking, whip goat cheese with heavy cream until light and fluffy.
- Let tart cool slightly, then dollop with whipped goat cheese and garnish with fresh herbs.
