For the Crust:
- 2 large sweet potatoes, grated
- 1/2 cup all-purpose flour
- 1 egg, beaten

- 4 oz feta cheese
- 1/4 cup Greek yogurt
- 1 tbsp lemon juice
- 1/4 cup pomegranate seeds
- Fresh parsley, chopped (for garnish)
Instructions
1. Prepare the Crust:
- In a large bowl, combine grated sweet potatoes, flour, egg, salt, pepper, and smoked paprika. Mix well.
- Heat olive oil in a skillet over medium heat. Form the sweet potato mixture into patties and cook for 4-5 minutes per side until golden and crispy.
- In a food processor, blend feta, Greek yogurt, and lemon juice until smooth and creamy.
- Serve the rösti topped with whipped feta, pomegranate seeds, and a sprinkle of fresh parsley.
