A festive and savory appetizer featuring roasted sweet potato rounds topped with tangy blue cheese, sweet-tart cranberry sauce, and crunchy pecans.

For the Crust:

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup crumbled blue cheese
  • 1/2 cup whole-berry cranberry sauce
  • 1/3 cup chopped pecans
  • 2 tablespoons fresh parsley, chopped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss sweet potato rounds with olive oil, salt, and pepper. Arrange in a single layer on the baking sheet.
  3. Roast for 20-25 minutes, flipping halfway, until tender and lightly browned.
  4. Remove from oven and top each round with blue cheese, a spoonful of cranberry sauce, and pecans.
  5. Return to oven for 3-5 minutes until cheese is slightly melted. Garnish with parsley before serving.

Notes

You can customize the seasonings to taste.
