For the Crust:
- 2 large sweet potatoes, sliced into 1/2-inch rounds
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 ounces brie cheese, sliced into small pieces
- 1/2 cup cranberry sauce
- 1/2 cup pecans, toasted and chopped
- 1/4 cup honey
- 1/2 teaspoon red pepper flakes
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss sweet potato rounds with olive oil, salt, and pepper, then arrange on a baking sheet in a single layer. Roast for 20-25 minutes until tender and lightly browned.
- Remove sweet potatoes from oven. Top each round with a piece of brie and return to oven for 3-5 minutes until cheese is melted.
- While sweet potatoes roast, heat honey and red pepper flakes in a small saucepan over low heat for 2-3 minutes to infuse, then set aside.
- Top each sweet potato round with a small spoonful of cranberry sauce and a sprinkle of toasted pecans. Drizzle with the hot honey mixture before serving.
