For the Crust:

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 4 ounces brie cheese, sliced into small pieces
  • 1/2 cup whole cranberry sauce
  • 1/4 cup chopped pecans
  • 1 tablespoon fresh thyme leaves

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss sweet potato rounds with olive oil, salt, and pepper, then arrange in a single layer on a baking sheet.
  2. Roast for 20-25 minutes until tender and lightly browned, flipping halfway through.
  3. Top each round with a piece of brie and return to oven for 3-5 minutes until cheese is melted.
  4. Spoon a small amount of cranberry sauce over each round, then sprinkle with pecans and thyme before serving warm.
