A festive and savory appetizer featuring roasted sweet potato slices topped with creamy brie, tart cranberry sauce, and crunchy walnuts.

For the Crust:

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 4 ounces brie cheese, cut into small pieces
  • 1/2 cup cranberry sauce
  • 1/4 cup chopped walnuts
  • Fresh thyme leaves for garnish

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss sweet potato rounds with olive oil, salt, and pepper. Arrange in a single layer on the baking sheet. Roast for 20-25 minutes until tender and lightly browned.
  3. Remove from oven and top each round with a piece of brie. Return to the oven for 3-5 minutes until cheese is melted.
  4. Spoon a small amount of cranberry sauce over each round, sprinkle with walnuts, and garnish with thyme. Serve warm.

Notes

You can customize the seasonings to taste.
