Description

Elegant, layered sweet potato stacks baked to perfection, topped with creamy burrata and a sweet-tangy maple-balsamic glaze.


Ingredients

For the Crust:

  • 2 large sweet potatoes, peeled and thinly sliced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste
  • 8 oz burrata cheese
  • 1/4 cup maple syrup
  • 2 tbsp balsamic vinegar
  • Fresh thyme leaves for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Grease a muffin tin or stack molds.
  2. In a bowl, toss sweet potato slices with olive oil, smoked paprika, garlic powder, salt, and pepper.
  3. Layer 4-5 slices in each muffin cup, overlapping slightly to form stacks.
  4. Bake for 25-30 minutes until tender and edges are crisp.
  5. Meanwhile, simmer maple syrup and balsamic vinegar in a small saucepan until slightly thickened, about 5-7 minutes.
  6. Remove stacks from oven, top each with a portion of burrata, drizzle with glaze, and garnish with thyme.

Notes

You can customize the seasonings to taste.
