For the Crust:
- 2 large sweet potatoes, peeled and thinly sliced
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and black pepper to taste
- 8 oz burrata cheese
- 1/4 cup maple syrup
- 2 tbsp balsamic vinegar
- Fresh thyme leaves for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Grease a muffin tin or stack molds.
- In a bowl, toss sweet potato slices with olive oil, smoked paprika, garlic powder, salt, and pepper.
- Layer 4-5 slices in each muffin cup, overlapping slightly to form stacks.
- Bake for 25-30 minutes until tender and edges are crisp.
- Meanwhile, simmer maple syrup and balsamic vinegar in a small saucepan until slightly thickened, about 5-7 minutes.
- Remove stacks from oven, top each with a portion of burrata, drizzle with glaze, and garnish with thyme.
