For the Crust:
- 1 pint cherry tomatoes
- 2 tbsp honey
- 1 tbsp olive oil
- 1/2 tsp red pepper flakes
- 1/2 tsp salt
- 8 oz feta cheese
- 1/4 cup Greek yogurt
- 1 tbsp lemon juice
- 1 clove garlic, minced
- Fresh basil for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F. Toss cherry tomatoes with honey, olive oil, red pepper flakes, and salt. Spread on a baking sheet and roast for 20-25 minutes until caramelized.
- In a food processor, blend feta cheese, Greek yogurt, lemon juice, and garlic until smooth and creamy.
- Spread whipped feta on a serving plate and top with the candied cherry tomatoes.
- Garnish with fresh basil and serve with crusty bread or crackers.
