A perfect balance of sweet and spicy candied cherry tomatoes served over creamy whipped feta.


Ingredients

For the Crust:

  • 1 pint cherry tomatoes
  • 2 tbsp honey
  • 1 tbsp olive oil
  • 1/2 tsp red pepper flakes
  • 1/2 tsp salt
  • 8 oz feta cheese
  • 1/4 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • Fresh basil for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F. Toss cherry tomatoes with honey, olive oil, red pepper flakes, and salt. Spread on a baking sheet and roast for 20-25 minutes until caramelized.
  2. In a food processor, blend feta cheese, Greek yogurt, lemon juice, and garlic until smooth and creamy.
  3. Spread whipped feta on a serving plate and top with the candied cherry tomatoes.
  4. Garnish with fresh basil and serve with crusty bread or crackers.

Notes

You can customize the seasonings to taste.
