For the Crust:
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup powdered sugar
- 1/4 teaspoon salt
- 3/4 cup passionfruit puree
- 1/2 cup granulated sugar
- 3 large egg yolks
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract
Instructions
1. Prepare the Crust:
- In a food processor, combine flour, powdered sugar, and salt. Add butter and pulse until the mixture resembles coarse crumbs.
- Press the dough into tart pans and chill for 30 minutes. Preheat your oven to 350°F (175°C) and bake for 10 minutes.
- In a saucepan, whisk together passionfruit puree, granulated sugar, egg yolks, and heavy cream over medium heat until thickened. Stir in vanilla extract and pour the filling into the pre-baked tart shells. Chill until set.
