For the Crust:

  • 2 pounds fresh green beans, trimmed and halved
  • 2 tablespoons unsalted butter
  • 1 medium onion, finely chopped
  • 8 ounces cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 1 1/2 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon soy sauce
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 2 cups crispy fried onions (store-bought or homemade)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Bring a large pot of salted water to a boil. Add green beans and cook for 5 minutes until bright green and tender-crisp. Drain and set aside.
  2. In a large skillet, melt butter over medium heat. Add chopped onion and cook until softened, about 5 minutes. Add mushrooms and garlic, cooking until mushrooms release their liquid and brown slightly, about 8 minutes.
  3. Sprinkle flour over the mushroom mixture and stir for 1 minute. Gradually whisk in broth, then heavy cream, stirring until smooth. Bring to a simmer and cook until thickened, about 5 minutes. Stir in soy sauce, pepper, and nutmeg.
  4. Combine the blanched green beans with the creamy sauce in a large bowl, then transfer to a 9×13-inch baking dish. Spread evenly and top with crispy fried onions.
  5. Bake for 20-25 minutes, until bubbly and onions are golden. Let cool for 5 minutes before serving.
