For the Crust:

  • 1 cup heavy cream
  • 2 tablespoons instant coffee granules
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips
  • 1/4 cup crushed chocolate wafer cookies

Instructions

1. Prepare the Crust:

  1. Whip the heavy cream with powdered sugar and vanilla until soft peaks form.
  2. Dissolve instant coffee in 1 tablespoon of hot water, then fold into the whipped cream mixture until fully incorporated.
  3. Spoon the mousse into serving glasses and chill for at least 20 minutes.
  4. Melt dark chocolate chips and mix with crushed wafer cookies, then sprinkle over the mousse before serving.
