For the Crust:
- 1 lb ground lamb or beef
- 1/2 cup breadcrumbs
- 1 large egg
- 1/4 cup finely chopped red onion
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup olive oil
- 1/2 cup chicken broth
- Juice of 2 lemons
- 1 tsp lemon zest
- Fresh dill for garnish
Instructions
1. Prepare the Crust:
- In a bowl, combine ground meat, breadcrumbs, egg, red onion, garlic, parsley, oregano, salt, and pepper. Mix gently until just combined.
- Shape the mixture into 1-inch meatballs. Heat olive oil in a large skillet over medium heat and brown meatballs on all sides, about 5-7 minutes.
- Reduce heat to low, add chicken broth, lemon juice, and lemon zest to the skillet. Cover and simmer for 15-20 minutes until meatballs are cooked through and sauce has thickened slightly.
- Garnish with fresh dill and serve warm with rice or pita bread.
