A frozen lemon cloud hugged by warm pistachio cookies for a delightful dessert experience.

For the Crust:
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 2 tbsp lemon zest
- 1/4 cup lemon juice
- 1 cup all-purpose flour
- 1/2 cup crushed pistachios
- 1/2 cup unsalted butter
- 1/2 cup brown sugar
- 1 egg
- 1 tsp vanilla extract
Instructions
1. Prepare the Crust:
- Whip heavy cream and powdered sugar until stiff peaks form. Fold in lemon zest and juice to create the mousse.
- Spread the lemon mousse into a lined dish and freeze for at least 2 hours until firm.
- Cream butter and brown sugar, then mix in egg and vanilla. Stir in flour and crushed pistachios to form cookie dough.
- Scoop dough onto a baking sheet and bake at 350°F (175°C) for 10-12 minutes until golden.
- Once cookies are warm, sandwich a slice of frozen lemon mousse between two cookies and serve immediately.
