Description

A frozen lemon cloud hugged by warm pistachio cookies for a delightful dessert experience.


Ingredients

For the Crust:

  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 2 tbsp lemon zest
  • 1/4 cup lemon juice
  • 1 cup all-purpose flour
  • 1/2 cup crushed pistachios
  • 1/2 cup unsalted butter
  • 1/2 cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. Whip heavy cream and powdered sugar until stiff peaks form. Fold in lemon zest and juice to create the mousse.
  2. Spread the lemon mousse into a lined dish and freeze for at least 2 hours until firm.
  3. Cream butter and brown sugar, then mix in egg and vanilla. Stir in flour and crushed pistachios to form cookie dough.
  4. Scoop dough onto a baking sheet and bake at 350°F (175°C) for 10-12 minutes until golden.
  5. Once cookies are warm, sandwich a slice of frozen lemon mousse between two cookies and serve immediately.
