Description

These delightful tartlets combine the sweetness of caramelized sweet potatoes with the tangy creaminess of goat cheese, all encased in a crispy puff pastry.


Ingredients

For the Crust:

  • 2 medium sweet potatoes, peeled and thinly sliced
  • 2 tablespoons olive oil
  • 1 sheet puff pastry, thawed
  • 4 oz goat cheese, crumbled

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss the sweet potato slices with olive oil and spread them on the prepared baking sheet. Roast for 15 minutes until tender.
  3. Cut the puff pastry into 4-inch circles. Place roasted sweet potatoes and crumbled goat cheese on top, then bake for an additional 15 minutes until golden.
