For the Crust:
- 2 medium sweet potatoes, peeled and thinly sliced
- 2 tablespoons olive oil
- 1 sheet puff pastry, thawed
- 4 oz goat cheese, crumbled
Instructions
1. Prepare the Crust:
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss the sweet potato slices with olive oil and spread them on the prepared baking sheet. Roast for 15 minutes until tender.
- Cut the puff pastry into 4-inch circles. Place roasted sweet potatoes and crumbled goat cheese on top, then bake for an additional 15 minutes until golden.
