A vibrant, nutrient-packed salad featuring creamy avocado, earthy roasted beets, tangy feta cheese, and crunchy walnuts, all tossed in a zesty lemon-honey dressing.

For the Crust:

  • 2 medium beets, peeled and cubed
  • 1 ripe avocado, sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped walnuts
  • 4 cups mixed greens (e.g., arugula, spinach)
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • Salt and black pepper to taste
  • Fresh dill for garnish (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss beet cubes with 1 tablespoon olive oil, salt, and pepper. Roast on a baking sheet for 25-30 minutes until tender, then let cool.
  2. In a small bowl, whisk together remaining olive oil, lemon juice, honey, salt, and pepper to make the dressing.
  3. Arrange mixed greens on a serving platter. Top with roasted beets, avocado slices, feta cheese, and walnuts.
  4. Drizzle the dressing over the salad and garnish with fresh dill if desired. Toss gently just before serving.
