For the Crust:
- 3 medium beets, peeled and sliced into rounds
- 8 oz goat cheese, softened
- 1/4 cup walnuts, finely chopped
- 2 tablespoons olive oil
- 1 tablespoon fresh thyme leaves
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Arrange the beet slices on the prepared baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 25-30 minutes or until tender.
- In a small bowl, mix walnuts, olive oil, thyme, salt, and pepper. To assemble, stack beet slices and goat cheese alternately, drizzle with walnut thyme mixture, and serve.
