Description

A beautiful and delicious stack of roasted beets layered with creamy goat cheese, topped with a delightful walnut thyme drizzle.

For the Crust:

  • 3 medium beets, peeled and sliced into rounds
  • 8 oz goat cheese, softened
  • 1/4 cup walnuts, finely chopped
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme leaves
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Arrange the beet slices on the prepared baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 25-30 minutes or until tender.
  3. In a small bowl, mix walnuts, olive oil, thyme, salt, and pepper. To assemble, stack beet slices and goat cheese alternately, drizzle with walnut thyme mixture, and serve.

Notes

You can customize the seasonings to taste.
