For the Crust:
- 8 oz goat cheese, softened
- 1/4 cup dried cranberries, finely chopped
- 1/4 cup shelled pistachios, finely chopped
- 2 tbsp honey
- 1 tsp red pepper flakes
- 1/4 tsp sea salt
- 1 tbsp olive oil
- Fresh thyme for garnish (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a small bowl, mix goat cheese, salt, and 1 tablespoon of honey until smooth. Form into 1-inch balls.
- Combine chopped cranberries and pistachios on a plate. Roll each goat cheese ball in the mixture, pressing gently to coat.
- Place truffles on the baking sheet and bake for 8-10 minutes, until slightly warm and softened.
- Meanwhile, warm remaining honey with red pepper flakes in a small saucepan over low heat for 2-3 minutes.
- Drizzle warm truffles with hot honey, garnish with thyme if desired, and serve immediately.
