Description

A creamy, tangy whipped feta base topped with wilted spinach and a bright garlic lemon drizzle, served warm in a skillet for a cozy appetizer or light meal.


Ingredients

For the Crust:

  • 8 oz feta cheese, crumbled
  • 1/2 cup plain Greek yogurt
  • 2 tbsp olive oil, divided
  • 1 tbsp lemon juice
  • 6 cups fresh spinach
  • 2 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • Salt and black pepper to taste
  • Red pepper flakes for garnish (optional)

Instructions

1. Prepare the Crust:

  1. In a food processor, combine feta, Greek yogurt, 1 tbsp olive oil, and 1 tbsp lemon juice. Blend until smooth and creamy, about 1-2 minutes. Set aside.
  2. Heat 1 tbsp olive oil in a skillet over medium heat. Add spinach and cook until wilted, about 3-4 minutes. Season with salt and pepper. Remove from heat.
  3. In a small bowl, whisk together extra virgin olive oil, 2 tbsp lemon juice, minced garlic, and lemon zest to make the drizzle.
  4. Spread the whipped feta mixture in the bottom of a clean skillet or serving dish. Top with the wilted spinach. Drizzle the garlic lemon mixture over the top.
  5. Garnish with red pepper flakes if desired. Serve warm with crusty bread or pita.

Notes

You can customize the seasonings to taste.
