For the Crust:
- 8 oz feta cheese, crumbled
- 1/2 cup plain Greek yogurt
- 2 tbsp olive oil, divided
- 1 tbsp lemon juice
- 6 cups fresh spinach
- 2 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 2 tbsp fresh lemon juice
- 1 tsp lemon zest
- Salt and black pepper to taste
- Red pepper flakes for garnish (optional)
Instructions
1. Prepare the Crust:
- In a food processor, combine feta, Greek yogurt, 1 tbsp olive oil, and 1 tbsp lemon juice. Blend until smooth and creamy, about 1-2 minutes. Set aside.
- Heat 1 tbsp olive oil in a skillet over medium heat. Add spinach and cook until wilted, about 3-4 minutes. Season with salt and pepper. Remove from heat.
- In a small bowl, whisk together extra virgin olive oil, 2 tbsp lemon juice, minced garlic, and lemon zest to make the drizzle.
- Spread the whipped feta mixture in the bottom of a clean skillet or serving dish. Top with the wilted spinach. Drizzle the garlic lemon mixture over the top.
- Garnish with red pepper flakes if desired. Serve warm with crusty bread or pita.
