Elegant, savory-sweet appetizer cups featuring creamy whipped feta, earthy roasted beets, and vibrant pomegranate arils.


Ingredients

For the Crust:

  • 8 oz feta cheese, crumbled
  • 4 oz cream cheese, softened
  • 2 tbsp Greek yogurt
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • 1 clove garlic, minced
  • 2 medium beets, peeled and diced
  • 1 tbsp olive oil
  • 1/4 cup pomegranate arils
  • 2 tbsp chopped fresh mint
  • Salt and black pepper to taste
  • Phyllo cups or mini tart shells

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss diced beets with 1 tbsp olive oil, salt, and pepper. Roast for 25-30 minutes until tender. Let cool.
  2. In a food processor, combine feta, cream cheese, Greek yogurt, 1 tbsp olive oil, lemon juice, and garlic. Blend until smooth and creamy.
  3. Spoon whipped feta mixture into phyllo cups or mini tart shells.
  4. Top each cup with roasted beets, pomegranate arils, and a sprinkle of fresh mint.
  5. Serve immediately or chill until ready to serve.
