For the Crust:
- 8 oz block feta cheese, crumbled
- 1/2 cup Greek yogurt
- 2 tbsp extra virgin olive oil
- 1/2 cup roasted red peppers, drained and chopped
- 1 clove garlic, minced
- 1 tbsp lemon juice
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh dill, chopped
- 1/4 cup extra virgin olive oil (for herb oil)
- Salt and black pepper to taste
- Pita bread or vegetable sticks for serving
Instructions
1. Prepare the Crust:
- In a food processor, combine crumbled feta, Greek yogurt, 2 tbsp olive oil, roasted red peppers, garlic, and lemon juice. Blend until smooth and creamy.
- Transfer the whipped feta mixture to a serving bowl and smooth the top with a spoon.
- In a small bowl, mix chopped parsley, dill, and 1/4 cup olive oil to make the herb oil. Drizzle generously over the whipped feta dip.
- Season with salt and pepper as desired. Serve immediately with pita bread or vegetable sticks.
