Description

A creamy, tangy feta dip blended with roasted red peppers and drizzled with a vibrant herb-infused oil, perfect for dipping or spreading.


Ingredients

For the Crust:

  • 8 oz block feta cheese, crumbled
  • 1/2 cup Greek yogurt
  • 2 tbsp extra virgin olive oil
  • 1/2 cup roasted red peppers, drained and chopped
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • 1/4 cup extra virgin olive oil (for herb oil)
  • Salt and black pepper to taste
  • Pita bread or vegetable sticks for serving

Instructions

1. Prepare the Crust:

  1. In a food processor, combine crumbled feta, Greek yogurt, 2 tbsp olive oil, roasted red peppers, garlic, and lemon juice. Blend until smooth and creamy.
  2. Transfer the whipped feta mixture to a serving bowl and smooth the top with a spoon.
  3. In a small bowl, mix chopped parsley, dill, and 1/4 cup olive oil to make the herb oil. Drizzle generously over the whipped feta dip.
  4. Season with salt and pepper as desired. Serve immediately with pita bread or vegetable sticks.

Notes

You can customize the seasonings to taste.
